Fresh, varietal character! Dry!
  • The vintage
  • Early ripening and well managed yields made 2015 a successful vintage! After a very mild winter, spring continued to be very clement and easy. The warmer months of May and June encouraged vine growth. A July heat wave (often more than 40°C) with no rain slowed the vegetative cycle considerably. Happily, in mid August, the rain fell and permitted the vines to grow and the grapes to ripen. By end of August, the vines were in perfect condition. The weeks before harvest were sunny with cool nights and light showers. The grapes matured perfectly.

  • Our domaine is in conversion BIO, Ecocert France certified, since 2013.
    Our goal is to foster soil enrichment with cover crops, composts, mulching and minimum tillage. We adapt cover crops to our local rainfall. When abundant, we let the grasses grow. When particularly dry, we till the soil or use the rolofaca which bends the grasses and creates a mulch. Grapes are hand harvested in early October.
  • Winemaking
  • Grapes are placed in pneumatic presses by gravity and gently pressed for 3-6 hours to preserve maximum varietal characters. Juices are then fermented in temperature controlled stainless steel tanks followed by 4 months ageing on fine lees. Sterile cartridge filtration and bottling takes place in June.

  • Alcohol level (% vol.): 13 %
  • Serving tips
  • Can be aged 3-5 years. Keep on side between 10-15°C. Ideal serving temperature is between 8-10°C.
  • Tasting notes
  • The nose opens with notes of fresh acacia flowers. The mouth is crisp and pure with an elegant finish.
  • Food pairing
  • Easy to drink with shrimp and grilled fish but also very well matched with fresh goat cheese.
